Caribbean and African-American cuisine combines a rich mixture of cultural influences that encapsulate celebration and ceremony; traditional and contemporary cooking; exploring generations of "secret" recipes in the company of friends and family, but most of all - the love and enjoyment of "home-cooking" with lots of fresh tropical vegetables, aromatic herbs and spices and fiery peppers!

Integral to its preparation is American long grain rice, the variety of choice for its ability to absorb the spicy seasonings so favoured in this colourful and joyous cuisine.

This very user-friendly style of cooking lends itself to creativity, colourful variations and pleasureable eating. It is not complicated to make, is highly adaptable and is as easy to prepare for small numbers, as it is for large. Not only is it food for the soul but also it is most certainly food from the heart.
