Storing
Price is not the only reason why rice is an essential ingredient
for large-scale catering operations. Because uncooked rice doesn't
take up much space, it can be bought in bulk, thereby reducing its
already low price even further. The fact that it can be stored for
a long time is also practical. Uncooked rice keeps well if stored
in sealed packaging or air-tight containers and kept in a cool
dry place. If you want to keep rice for even longer, it is advisable
to refrigerate it. By naturally "preserving" it in this way, rice
will lose none of its flavour or nutrients when kept for even
longer periods.
But because of the oil content in its bran layers, brown wholegrain
rice can be stored for only about 6 months at room temperature.
However, refrigerating brown rice can also extend its storage period.

 

 

                                                     Cook chill process
You can, of course, also refrigerate or freeze cooked rice.
To do this, as soon as the rice is cooked, cool it rapidly
in covered, shallow pans or bowls to be cooled quickly to
below 8 deg C within 90 minutes of cooking and thereafter,
refrigerated at between 1- 5 deg C (well-covered).
In this way, cooked rice can be kept for up to 3 days.
If you are going to freeze cooked rice, it is advisable to
divide the rice into portion-sized packs to make quantities
and thawing easier. Frozen rice should be used within 6 months.
