Taco Rice Soup
             Method:

Soften the spring onions in hot oil. Combine the stock, rice, chicken and chillies, cover and simmer for about 20 minutes. Add the lime juice, salt and pepper. Fill the plates with the soup and add tomatoes and avocados. Garnish with lime slices, herbs and Taco chips
