The Best from the West: The TexMex cuisine

TexMex cuisine is a combination of culinary know how from Arizona, Texas, New Mexico and Mexican traditions. The result is a hearty, homely cuisine typical of the US melting pot. Beef, chilis, beans, corn and rice feature in endless new combinations such as hot chilli, outdoor barbecues or a variety of wraps using tortillas or taco shells. One of the main ingredients in all the dishes is rice, which counteracts and soothes the hot spices and serves as a delicious base.

We recommend easy cook (parboiled) American rice for the sake of catering convenience. The weights given in the recipes refer to uncooked rice.
